- Head Chef
As the Lido in Bristol celebrates its 10th Anniversary and brings in the New Year, we are excited to announce that we are looking for an experienced, passionate and savvy Head Chef to join The Lido.
This opportunity would suit someone who is looking to bring their own dynamic approach to the kitchen. We are lucky enough to boast a wood fired oven as well as charcoal grill which together have a capacity to feed a full restaurant of 90-100 and a downstairs Tapas Bar of 35-40 guests.
The Lido is known for both Moorish and Mediterranean styles of cooking, and now we are looking for someone with a desire to create, develop and move with the demanding trends of the restaurant industry while maintaining both control and an identity.
The Lido is open 7 days a week for breakfast, lunch and dinner so this is an opportunity for someone with a drive to take on a challenge and enjoy seeing these through and enjoying the results and successes. Furthermore we serve our tapas menu from 12pm throughout the day. The time to talk with your Front of House teams in between service needs to be proactive, detailed and focused on really teaching them about the dishes that day. We are looking for someone with a want to develop individuals; teaching, training and always striving for harmony both within your department and between other departments.
We require any applicant to have at least 4 years’ experience in a similar role and establishment with proven experience running a kitchen and managing and maintaining a team. We are looking for somebody who knows how to run a kitchen but most importantly somebody who wants to be the central pillar to this iconic site whilst being inherently passionate about food.
Other responsibilities you will undertake;
·Overall responsibility for daily operations in the kitchen
·Liaising with suppliers and negotiating prices
-Overseeing all Health and Safety compliance for the kitchen
·Maintaining or raising the profit margins on food
·Ensuring all menus are updated based on produce availability and seasonality and that all menus are accurately calculated to ensure maximum GP.
·Managing, training and recruiting a brigade of chefs
·Writing rotas that reflects levels of trade and comes within costs as directed by the company
Who are we?
The Lido is an outdoor swimming pool surrounded by an award winning restaurant, tapas bar and spa. Dating back to 1849 the Lido is one of the oldest surviving Lido’s in the UK, allowing all year round swimming. The Lido opened its doors once more to Bristol and beyond in December 2008 and has since become a venue for every occasion from daily swims, celebrations and holidays. Our Award winning restaurant is situated in the old viewing gallery of the Clifton Pool. The idea is for guests to sit back, enjoy being served by friendly staff whilst watching the swimmers below and your food being prepared in the Wood fired oven. Our Spa provides a holistic approach to tailored massages, using bespoke Lido oils, guests can relax while hearing the lapping of the water on the pools edge.
